We can’t wait to welcome everybody over summer! ” Contemporary : A sophisticated day in the country 15/20 A Scandi-chic pavilion nestled amongst ancient gums, the restaurant Polperro matches its preternatural good looks with food that’s almost too pretty to eat. Chef Gayan Pieris is a devotee of edible flowers, vibrant herbs and meticulous tweezer work, but his degustation goes beyond the superficial to deliver a keen test of the local. Snappy canapés kick off proceedings – a brined mackerel cake is sparked up with fermented lime, and a demitasse of Jerusalem artichoke soup hides under parsnip froth. The follow-up is a rich lamb pithivier, which makes a dramatic arrival in a charcoal-black pastry casing, a play in contrasts to the edible sunshine of an accompanying burrata in citrus and red-onion dressing. The procession of more than 10 dishes, across five courses, requires a designated driver if you’re to explore the estate wines in the way they deserve. Our recommendation?
