Our vineyards are managed without using herbicides or insecticides. Biological, organic, biodynamic and good cultural practices are used maximise quality and longevity of the vineyard sites . In some of our vineyards, we are currently in the process of undertaking organic certification.

Wine Making

The fruit is handpicked and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulphur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient and transferred to barrel with full solids, with minimal sulphur added. Fermentation occurs using wild yeast and it is then left unsulfured to the following summer at which time most of the wine has completed full malo- lactic fermentation .  A  minimal amount of sulphur is added and left in barrel for a total of 6 months where it is racked off gross lees and transferred to tank.  The resulting wine is bottled using no finings and minimal filtration.

Tasting Notes

Lifted pear, lemongrass and fresh pea on the nose. The palate is filled with a spice and texture. It’s pure elegant, medium bodied, with a fresh finish.

Review

Poached pear, cinnamon and soft oak - subdued and poised. Rounded, textural and compelling, ripe and serious. Classic gris generosity, with complexity that adds serious sophistication. Benchmark  The Real Review - 96 POINTS

The words 'Pinot Gris' and 'exceptional' rarely meet in a sentence, but those that take the variety seriously know that high quality wines are a possibility and a delight - textural detail, complexity of fruit flavours and jubilant perfume are the by-product of considered winemaking.
