TASTING

Lifted florals and a refreshing saline character over layers of lemon, citrus and nectar on the nose. The palate is textural and briny, showing lemon and lime zest with a nice mid-palate fruit weight that is balanced by refreshing acidity.

WINEMAKING

The fruit is hand-picked then whole bunch pressed and transferred to old French oakbarrels. It is then allowed to ferment using wild yeast then racked to stainless steel tanksand bottled the following spring. 

VINEYARD

Talland Hill ‘new block’ vineyard, situated on an Easterly facing slope at 190m above sea level, in Red Hill.

VITICULTURE

We purchase our fruit from the vineyards, in partnership with growers, however we do use our own fruit from young vines. We grow, make and farm our vineyards using a philosophy of sustainability and regenerative agriculture, applying a mix of biological, bio-dynamic and organic practices.
