TASTING

There are notes of charcuterie, violet and dark cherry on the nose. On the palate it’s all dusty, velvety tannins with dark cherry tang bringing refreshing acidity. An excellent food wine, it wants bold flavours, grilled meats and seafood. It also drinks happily on its own, slightly chilled or at room temperature.

Even Keel Joven Tempranillo is our happy accident. Each year we make our rosé from this parcel of Mornington Peninsula Tempranillo but at the time of harvest our press was all tied up with a backlog of white grapes. Our only option was to drop the fruit into a red fermenter (fully destemmed) with the lid on and turn the cooling on with the idea to press it in a day or two and make a rosé with a touch more colour. However in the chaotic nature of vintage, it was forgotten and by the time it was remembered the wine had well and truly kicked off fermenting (carbonically) and was almost sugar-dry: our only option was to make a dry red. Pressed off skins after eight days and transferred to large-format oak and stainless steel tanks, the wine was bottled in the spring. ‘Joven’ is the Spanish word for young, referencing a wine made to be enjoyed in its youth, yet this wine has the structure to age if needed.

We purchase our fruit from the vineyards, in partnership with growers, however we do use our own fruit from young vines. We grow, make and farm our vineyards using a philosophy of sustainability and regenerative agriculture, applying a mix of biological, bio-dynamic and organic practices.
