TASTING
Classy and complex with a friendly nose of blueberries, violets, mushrooms, green peppercorns and herbs. Focused ethereal palate, velvety tannins and underlying acid.
The aroma leads with violets and subtle spice. A medium-bodied wine with velvety tannins, blueberries and notes of chocolate on the palate.
WINEMAKING
The fruit is handpicked and fermented using wild yeast and 20% whole bunches, a small amount of Viognier skins are also added. It is plunged twice a day and pressed off skins after 20 days. The subsequent wine is then trucked overnight to our winery in Red Hill on the Mornington Peninsula. The wine is transferred to barrel and matured, predominately in seasoned oak for 10 months. The wine is then bottled without fining or filtration.

With a continental climate and large diurnal fluctuations creating great natural acidity and fine structured tannins in the wine.

VITICULTURE
We purchase our fruit from the vineyards, in partnership with growers, however we do use our own fruit from young vines. We grow, make and farm our vineyards using a philosophy of sustainability and regenerative agriculture, applying a mix of biological, bio-dynamic and organic practices.
