Talland Hill Single Vineyard Chardonnay 2021

TASTING

Exotic, complex and characterful with ripe peach, lemon tart and florals. The palate is full of exotic tropical but with refreshing citrus fruit acid line that occasional swells through the mid palate displaying textural savoury characters which are both pithy and pillowy at the same time. The wine finishes with beautiful fresh acidity.

WINEMAKING

Certified Organic and Biodynamic – the fruit is handpicked in two picks across front block and villa block, the fruit is then whole bunch pressed on the same day using a gentle champagne press cycle. No enzymes or sulphur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient and transferred to barrel with full solids and minimal sulfur is added.
Fermentation occurs using wild yeast and is then left unsulfured to the following summer at which time most of the wine has completed full malo-lactic fermentation. A minimal amount of sulfur is added in the spring and left in barrel for a total of 12 months where it is racked off gross lees and into tank. The resulting wine is bottled using no finings and minimal filtration.

Chardonnay planted on a south west facing slope with vineyard rows orientating the same way.

The Talland Hill vineyard is the warmest and most sheltered of our four single vineyards, it is also the of our first single vineyards to be picked each year. This site produces intense and mineral driven Chardonnay.

“Super impressive chardonnay from the warmest Polperro vineyard. It’s certified organic and biodynamic and the fruit is treated gently after handpicking. The whole bunch pressing takes place using a champagne press cycle. The wine spends time on full solids with wild yeast fermentation and full malolactic. It eventually gets bottled without fining and filtering. Creamy stone fruit with a nectarine and peach nuance against further complexity from the lemon meringue characters.
