Vineyard :  Polperro Bistro Vineyard Technical Info Altitude : 170m above sea level close planted Clone : P58 Vineyard orientation : Polperro Bistro vineyard split over two blocks; one running east-west the other north-south. Both are on volcanic red clay and north facing. Front block 1.7 acres, Villa block 0.8 acres.

The vineyard is managed without using herbicides or insecticides and the use of biological and good cultural practices is maximised to control disease. For the most part only organically permitted fungicides are used to control disease in the vineyard, however, on rare occasions, systemic fungicides are needed. Our plan is to gradually convert the vineyards to organic once the vineyard’s immune system is fully developed.


Wine Making

Analysis: pH:  3.24T/A  7.1 g/l FSO2 : 25ppm  TSo2 : 90ppm Alc:  12.9%v/v  Dissolved oxygen: 0.60 mg/L  The fruit is handpicked in two picks, and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulphur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient and transferred to barrel with full solids and minimal sulphur  is added. Fermentation occurs using wild yeast and is then left unsulfured to the following summer at which time most of the wine has completed full malo- lactic fermentation.  A minimal amount of sulphur is added in the spring and left in barrel for a total of 12 months where it is racked off gross lees and into tank.  The resulting wine is bottled using no finings and minimal filtration.

Tasting Notes

Vibrant notes of fresh peach and lemon curd on the nose. This Chardonnay shows a natural acidity as you would expect from a cool climate. The full malolactic fermentation adds a smooth and creamy texture which soften the wine. This leads into a subtle and balanced pallet of spices and nuts, finishing with a refreshing minerality.

Review Crazy good! A blend of two vineyards, it’s a generous wine yet it’s quite tempered at the same time - clearly proud of the skin it’s in. Top stuff. Currently, the vineyard is going through a process to convert over to organic. The work in the winery sees no enzymes or sulphur used except for when the barrel is put to sleep for 12 months and a minor addition of sulphur is slipped in. Clearly, Sam Coverdale wants the vineyard and the fruit to speak for themselves. Whiffs of struck match early. White peach, grapefruit and lemon juice are fleshy and generous filling the mouth with ease. Deft touches of caramel before a fine minerally sits back but makes its presence felt. Finishing long, satisfying is the feeling washing over you as you recline and indulge. Qwine - 94 points
